Copycat Crumbl Churro Cookies

Leaving your house to go pick up Crumbl cookies is not necessary when you can make these Copycat Crumbl Churro Cookies at home! They are a soft, tender, and chewy cookie that is full of cinnamon. A swirl of cinnamon-sugar buttercream is piped on top to add another churro-esque melt in your mouth element. 

I have to say – I much prefer the copycat recipes over the original versions!

Copycat recipe or not, this recipe results in some pretty darn delicious cookies. It is the first recipe I tried by Chahinez and all of her others have been equally fantastic. I love that she gets the balance of sweetness perfect in her recipes, and also favors a soft cookie base.

Why I love this churro cookie recipe:

  • The cookie is so soft and chewy.
    • I am team chewy cookie, and these cookies have exactly that texture.
    • They also stayed soft for days in the fridge, which is a true testament to how tender a cookie truly is.
  • The cinnamon-sugar churro flavor is perfectly balanced.
    • I don’t think you can go wrong with any cinnamon focused desserts – the classic cinnamon roll, churros, cinnamon roll blondies or cheesecake, the options are endless! In this copycat recipe, the cinnamon flavor is spot on. You get the impact from the spice, but it isn’t overpowering. 
  • The cinnamon buttercream is incredible.
    • One of my favorite aspects of this cookie is the luscious churro inspired buttercream on top. The way it melds with the soft cinnamon cookie base is an indulgent moment worth stopping to savor.

Tips for making the Copycat Crumbl Cookies:

  • Use a light colored cookie sheet.
    • I cannot emphasize enough how much using a light colored baking sheet improved the bake on my cookies. The bottoms are perfectly golden and don’t overcook, and you have much more leeway with the baking time.
    • I have 3 sheets in rotation by Nordic Ware that I have used religiously since switching from dark to light and have never looked back!
  • Use a food scale.
    • For uniformity of cookie size and also to ensure the ingredients are measured properly, a food scale is your best friend. Accidentally adding too much flour, for example, could completely throw off the texture of the cookies.
  • Have fun with the piping tip!
    • For these, I used a small open star tip to create a pretty, ripply ribbon effect. You could pipe a classic swirl, a rose, or any design you fancy!
  • Roll the dough in cinnamon sugar and sprinkle with more after frosting.
    • Both of these steps add extra oomph in the churro flavor department making for an even prettier cookie, but more importantly, an even tastier one!

I always know a recipe is a winner when I receive a text or call asking when the next time I’m going to make it is – on the same day they received the dessert! This happened with quite a few friends and family members when I gave them these Copycat Churro Crumbl Cookies. They fell in love with the cinnamon flavor (and especially the buttercream). There were also a few shocked reactions at how much they preferred these cookies over the Crumbl version!

You are definitely not missing out on anything if you don’t have a Crumbl location near you or simply want to make your own at home. If you are a churro or cinnamon lover, these have your name written all over them!
