Spooky, chewy, and chocolatey – these brownies have it all! This from-scratch brownie recipe is my all-time favorite, and I can never resist making them for a holiday. These Halloween Oreo Cookie Boo Brownies are packed full of crushed Oreos and chocolate chips, giving them an absolutely incredible crunch. To elevate the textures and make them stand out even more, try them chilled!

One of the best elements of these spooky treats is that there isn’t any difficult decorating required. Oreo does it for us! The cookies are filled with orange creme and the designs have a fun variety of ghosts, pumpkins, witches, and spider webs.

After the first bite I took into these brownies a few years back, I knew it was going to become a rare occasion that I reach for a boxed mix. While I will say that store-bought brownie mixes are delicious in their own right, these from-scratch brownies are truly something special.

All of the recipes I have tried from Ashley, of Baker by Nature, have turned out incredible. This recipe, however, has remained the one I bake most often. I don’t find the process of making these much more difficult or time consuming than using a pre-made mix. Once you try them, you’ll taste why the few extra steps are worth it.

This is one of those recipes that your friends and family will be asking about. Whether it’s for the actual recipe or simply to request you make them again soon. These brownies truly are memorable!

Tips for making the Halloween Oreo Brownies:

I follow the recipe exactly as written, but a few tips and considerations will help ensure success and a perfectly baked batch.

Line your pan with parchment paper: Lining your pan with parchment paper ensures easy removal of the brownies without any bits sticking to the sides. For an extra spooky twist, I used pumpkin pattered parchment paper I found at Home Goods last year. It is by the brand Core Kitchen and makes an adorable, festive liner for treat tins and gift boxes.

Don’t overbake the brownies: Keep a close eye on the brownies as we want them to stay nice and fudgy. If using a toothpick to test for doneness, keep in mind that the pick might hit a melty chocolate chip making them appear falsely underdone. Check a few spots if using this method. My brownies took about 32 minutes.

Leave some Oreo pieces whole on top: While you will want to chop the Oreos into smaller pieces for mixing into the batter, when placing them on top, keep some whole. This way when you cut the brownies into bars you can still see the fun and festive images on the Oreos. I take my time to make sure all of the Oreos with the Halloween images are facing up to ensure no spooky design is lost!

Tips for cutting the Oreo brownies into clean slices:

Achieving cleanly sliced squares of baked goods can be a challenge, but these brownies thankfully haven’t put up too much of a fight.

  • First, make sure the brownies are fully cooled, and even refrigerated a bit to firm them up.
  • Using a large chef’s knife, press down and then up to cut the brownies, rather than dragging the knife through. My favorite knife for this is one I picked up a few years ago – Farberware Edgekeeper 8 Inch Chef Knife.
  • Wipe down the knife after each slice, and you will have gorgeous and spooky brownies you’d be proud to gift or share!

These Halloween Oreo Boo Brownies are the perfect spooky treat. They have a fudgy base full of incredible texture from crushed Oreos and chocolate chips. Add them to a festive dessert board or treat gift tins and you are certain to be the ghost-est with the mostest!

  • Prepare your metal pan by lining it with parchment paper and follow recipe directions for making the brownie batter.
  • Pour the batter into your lined pan, and smooth out the top with a spatula.
  • Place the Halloween Oreos on top, with the spooky designs facing up and leaving some Oreos whole.
  • Bake brownies and allow to fully cool in pan before removing and slicing into bars.
  • To get clean lines when cutting the brownies, use a large chef’s knife. In one swoop, press down and lift up the knife, and wipe it off between slices. Brownies that have fully cooled or have been refrigerated will cut easier and be less likely to stick to the knife.
  • *Tip* – Try the brownies chilled. They stay chewy and the texture from the Oreos and chocolate chips stands out even more!

Notes

  • Do not over bake the brownies. Look for a shiny, slightly cracked top and set edges.
  • Place some larger pieces and whole Oreos on top of the brownie batter. This way, some of the spooky design will stay in tact when you slice into them.
  • To get clean slices, use a large chef’s knife and press it down and lift it up, rather than slicing and dragging through the brownies. Wipe the knife off between cuts and allow brownies to fully cool before slicing.
