Recipe used for the Green and Gold Sugar Cookies:

Sparkle Sweetheart Cookies by Sally’s Baking Addiction

I followed Sally’s Baking Addiction’s recipe for Sparkle Sweetheart Cookies to make this St. Patrick’s Day rendition. Her recipes never fail to become tried and true additions to my baking rotation.

Tips for making the sugar cookies:

  • Almond Extract: Almond flavor adds a delicious twist to these cookies.
    • For nut allergies: I use McCormick Almond Flavor. It is an imitation almond flavor that is absolutely delicious and tastes like the real thing.
  • Make ahead– This dough requires some chill time, so I love to make it the day before and then roll it into balls and bake the next day.
    • If you do this, be sure to let the dough sit at room temperature for at least 30 minutes. It will be easier to work with and allow the sugar to adhere to the dough more easily.
  • Chill immediately after placing the chocolate on top: Make space in your fridge or freezer before starting to bake the cookies. After you place the chocolate piece on top it will start to melt quickly. You’ll want to make sure you can quickly pop them into the fridge to set.

How to make the chocolate clovers using a silicone mold:

After a bit of searching I saw that chocolate clovers are not something you can buy in the grocery store, so I had my first attempt at making my own chocolate using a silicone mold!

I was intimidated to venture into this realm, but was pleasantly surprised with how well it went.

Tools needed:

  • Silicone Mold: I picked up a few silicone clover molds by Wilton at Jo Ann Fabrics. They were perfect for this as the clovers in the mold are a small size. This silicone mold on Amazon looks very similar to the ones I have.
  • Chocolate: I use Ghirardelli dark chocolate melting wafers since they are so easy to work with. I also love the shine they give. You can easily substitute for candy melts or your own preferred method of making chocolate.

Steps to make the chocolate clovers:

  1. Melt the chocolate according to the package instructions.
  2. Pour the melted chocolate into a ziplock bag or piping bag.
  3. Cut a small tip off of the edge of the bag and fill each cavity in the mold with chocolate.
  4. Gently lift up and tap down the mold a few times to help the chocolate settle and eliminate air bubbles.
  5. Carefully pop and peel the clovers out of the mold once the chocolate has hardened.

Notes

  • The chocolate clover will melt quickly after it is placed on the freshly baked cookies. Pop them in the refrigerator right away to slow this process down and do not touch them until the chocolate is firm.
